Zesty Lemon Meltaway Cookies (Light & Melt-in-the-Mouth)
For the cookies
- 1 cup (225 g) unsalted butter, softened
- ½ cup (60 g) powdered sugar
- 1 tbsp lemon zest
- 2 tbsp fresh lemon juice
- 1 tsp vanilla extract
- 1 ¾ cups (220 g) all-purpose flour
- ¼ cup (35 g) cornstarch
- ¼ tsp salt
For coating
- 1 cup (120 g) powdered sugar
- Optional: ½ tsp lemon zest mixed in for extra zing
