Zesty Lemon Blueberry Loaf

  • 2–3 tablespoons lemon juice
  • 1 cup powdered sugar

Instructions

  1. Preheat & Prep: Start by preheating your oven to 350°F (175°C). Grease a 9×5-inch loaf pan to prevent the loaf from sticking, or line the pan with parchment paper for easy removal.
  2. Mix Dry Ingredients: In a medium-sized bowl, whisk together 1½ cups + 1 tablespoon of flour, 2 teaspoons of baking powder, and ½ teaspoon of salt. Set this mixture aside while you work on the wet ingredients.
  3. Beat the Eggs & Sugar: In a large bowl, beat 3 eggs and 1 cup of sugar together until light and fluffy. This will take about 2-3 minutes with an electric mixer. You should end up with a smooth, pale mixture.
  4. Add Wet Ingredients: To the egg and sugar mixture, add 1 cup of yogurt (or sour cream), ½ teaspoon of vanilla extract, ½ cup of oil, and 2 teaspoons of lemon zest. Mix until everything is well incorporated. The yogurt or sour cream adds moisture and richness, while the oil keeps the loaf tender.
  5. Combine Wet & Dry Ingredients: Gradually add the dry flour mixture into the wet ingredients, mixing until just combined. Be careful not to overmix, as this can lead to a dense loaf.
  6. Fold in the Blueberries: Toss 1½ cups of blueberries with 1 tablespoon of flour to coat them lightly. Gently fold the floured blueberries into the batter, making sure they’re evenly distributed throughout. This helps prevent the berries from sinking to the bottom of the loaf.
  7. Bake the Loaf: Pour the batter into your prepared loaf pan, spreading it evenly. Bake for 50-55 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with just a few moist crumbs attached.
  8. Make the Lemon Glaze: While the loaf is baking, whisk together 2–3 tablespoons of lemon juice and 1 cup of powdered sugar in a small bowl until smooth. Adjust the amount of lemon juice to achieve your desired glaze consistency. It should be thick but pourable.
  9. Glaze the Loaf: Once the loaf is done baking, remove it from the oven and allow it to cool slightly. Drizzle the lemon glaze over the warm loaf, letting it soak into the top for extra flavor and moisture.
  10. Serve: Once the loaf has cooled, slice it up and enjoy! It’s perfect for brunch, dessert, or snacking throughout the day. The crispy edges, soft center, and tangy lemon glaze will keep you coming back for more.
