  1. Preheat and prepare the baking sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent the fritters from sticking and for easy cleanup.
  2. Mix the dry ingredients: In a large bowl, combine the all-purpose flour, sugar, baking powder, salt, cinnamon, and nutmeg. Whisk them together until well blended. The spices will add a warm, comforting flavor to the fritters.
  3. Mix the wet ingredients: In a separate bowl, whisk together the milk, eggs, vanilla extract, and melted butter until smooth and fully combined.
  4. Combine wet and dry ingredients: Add the wet ingredients to the dry mixture, stirring gently until just combined. Be careful not to overmix, as this can result in dense fritters. The batter will be thick.
  5. Fold in the apples: Gently fold in the diced apples, ensuring they are evenly distributed throughout the batter. The apples will add a natural sweetness and moisture to the fritters.
  6. Shape the fritters: Using a spoon, drop mounds of batter onto the prepared baking sheet, shaping each mound into small rounds. Leave some space between each fritter to allow for spreading as they bake.
  7. Bake the fritters: Bake for 15–18 minutes, or until the fritters are golden brown on top and a toothpick inserted into the center comes out clean. The fritters should be firm to the touch but soft and fluffy inside.
