Voodoo Egg Rolls

👨‍🍳 Instructions

1. Prepare the Filling

In a large mixing bowl, combine the crawfish or shrimp, diced andouille sausage, shredded cheddar cheese, red bell pepper, red onion, cooked rice, Cajun seasoning, and chopped parsley. Mix well to ensure all ingredients are evenly distributed.

2. Assemble the Egg Rolls

  1. Lay one egg roll wrapper flat on a clean surface with a corner pointing toward you (diamond shape).
  2. Spoon 2–3 tablespoons of the filling into the center of the wrapper.
  3. Fold the bottom corner over the filling, then fold in the sides tightly.
  4. Roll it up tightly toward the top and seal the edge with a bit of water.
  5. Repeat with the remaining wrappers and filling.

3. Fry the Egg Rolls

  1. Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
  2. Fry the egg rolls in batches for 3–4 minutes, turning occasionally, until they are golden brown and crispy.
  3. Remove and drain on paper towels.

🍽️ Serving Suggestions

  • Serve hot with a drizzle of spicy ranch, remoulade, or warm cheese sauce.
  • Pair with a side of Cajun slaw or dirty rice for a full Southern-inspired meal.
  • Optional: Garnish with chopped parsley or extra Cajun seasoning for added flair.
