Step 1: Preheat & Prepare Pan
- Preheat oven to 180°C (350°F).
- Grease and line an 8-inch (20 cm) round cake pan with parchment paper.
Step 2: Mix the Dry Ingredients
- In a large bowl, whisk together the flour, baking powder, baking soda, nutmeg, cinnamon, and salt. Set aside.
Step 3: Combine the Wet Ingredients
- In a separate bowl, whisk together the applesauce, oil, brown sugar, vanilla, and milk until smooth.
Step 4: Combine & Add Fruits
- Gently fold the wet mixture into the dry ingredients just until no flour streaks remain.
- Add tutti frutti, chopped nuts, raisins, and glace cherries. Stir to distribute evenly.
- If using, fold in the orange zest for extra fragrance.
Step 5: Bake
