Tutti Frutti Cake (Egg-Free, Moist & Festive)

Step 1: Preheat & Prepare Pan

  1. Preheat oven to 180°C (350°F).
  2. Grease and line an 8-inch (20 cm) round cake pan with parchment paper.

Step 2: Mix the Dry Ingredients

  1. In a large bowl, whisk together the flour, baking powder, baking soda, nutmeg, cinnamon, and salt. Set aside.

Step 3: Combine the Wet Ingredients

  1. In a separate bowl, whisk together the applesauce, oil, brown sugar, vanilla, and milk until smooth.

Step 4: Combine & Add Fruits

  1. Gently fold the wet mixture into the dry ingredients just until no flour streaks remain.
  2. Add tutti frutti, chopped nuts, raisins, and glace cherries. Stir to distribute evenly.
  3. If using, fold in the orange zest for extra fragrance.

Step 5: Bake
