Texas Twinkies Egg Rolls with Honey

  • ¼ cup honey
  • 1 tablespoon water (optional, to thin the honey)

Directions

Step 1: Prepare the Filling

  1. In a large mixing bowl, combine the shredded beef brisket (or pulled pork) with the softened cream cheese and shredded cheddar or pepper jack cheese. Stir until everything is fully incorporated and the mixture is creamy and smooth.
  2. If you like a little extra flavor, add the barbecue sauce and finely chopped jalapeños to the mixture. The barbecue sauce adds a smoky sweetness, and the jalapeños give it a spicy kick. Mix everything well.

Step 2: Fill the Egg Rolls

  1. Lay the egg roll wrappers flat on a clean surface, with the corner pointing towards you (so it forms a diamond shape).
  2. Spoon about 2-3 tablespoons of the brisket and cheese filling into the center of each egg roll wrapper.
  3. Fold in the sides of the wrapper, then roll it tightly from the bottom up, sealing the edge with a little bit of water to help it stick. Repeat this process for all the egg rolls.
