Tennessee Onions (Better than Onion Rings!)

Ingredients

  • ½ cup shredded mozzarella cheese
  • 4 tbsp butter, sliced
  • ½ cup shredded cheddar cheese
  • 1 large onion, sliced into thick rings
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper to taste
  • 1 egg, beaten
  • 1 cup breadcrumbs (preferably panko for extra crispiness)
  • Cooking oil, for frying (vegetable or canola oil works well)
  • Optional: fresh parsley, chopped (for garnish)
