Super Soft Gingerbread Cookie Bars

👩‍🍳 Instructions

  1. Preheat: Set your oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper or lightly grease it.
  2. Mix the Wet Ingredients: In a large bowl, stir together the melted butter, brown sugar, and granulated sugar. Add the egg and molasses, and mix until smooth and glossy.
  3. Combine the Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, nutmeg, and cloves.
  4. Make the Dough: Gradually add the dry ingredients into the wet mixture. Stir until just combined. The dough will be thick and slightly sticky.
  5. Bake: Spread the dough evenly into the prepared pan. Bake for 20–25 minutes, or until the edges are set and a toothpick inserted near the center comes out with moist crumbs. Don’t overbake — the center should be soft and fudgey.
  6. Cool: Let the bars cool completely in the pan before frosting.
