Southern Chicken Scampi with Creamy Parmesan Grits

  • 1 cup stone-ground grits
  • 4 cups water or chicken broth
  • 1 cup whole milk
  • ½ cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and black pepper, to taste

Instructions

1. Prepare the Creamy Parmesan Grits:

  1. In a large saucepan, bring 4 cups of water or chicken broth and 1 cup of milk to a boil over medium-high heat. Stir occasionally to avoid scorching.
  2. Gradually whisk in the grits while stirring constantly to prevent lumps. Once incorporated, reduce heat to low.
  3. Cover and simmer gently for 25–30 minutes, stirring every 5–7 minutes. The grits should become thick, creamy, and tender as they cook.
  4. Once fully cooked, stir in the heavy cream, grated Parmesan, butter, and salt and pepper to taste. Cover and keep warm while you prepare the chicken.
