4. Pipe the Mashed Potato “Frosting”

  1. Allow meatloaf cupcakes to rest for 5 minutes in the pan. Carefully remove from muffin tin.
  2. Scoop the warm mashed potatoes into a piping bag fitted with a large star tip. Pipe swirls of mashed potatoes onto each meatloaf cupcake like frosting.
  3. Optional: Sprinkle with chopped chives or crispy bacon for garnish. Serve immediately with extra BBQ sauce on the side if desired.
