Slow Cooker Cheesy Mozzarella Chicken

Servings

Serves: 4

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 teaspoons garlic powder
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 cup marinara sauce
  • 2 teaspoons Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 1 tablespoon chopped fresh basil, for garnish

Directions

  1. Start by seasoning the chicken breasts on both sides with garlic powder, salt, and black pepper. Be generous with the seasoning to build a flavorful base for the dish.
  2. Place the seasoned chicken breasts in an even layer at the bottom of your slow cooker. Try not to overlap them, so they cook evenly and stay moist.
  3. In a mixing bowl, combine the chicken broth, marinara sauce, and Italian seasoning. Stir well until fully blended. This mixture will serve as the flavorful cooking liquid that keeps the chicken tender and infuses it with rich tomato and herb notes.
  4. Pour the sauce mixture over the chicken, making sure each piece is fully coated. The liquid should nearly submerge the chicken, ensuring it stays moist during the slow cooking process.
  5. Cover the slow cooker with the lid. Cook on low for 6 hours or on high for 3 hours, depending on your time preference. The chicken is done when it reaches an internal temperature of 165°F and is fork-tender.
