This Skillet Pizza is a low-carb, delicious alternative to traditional pizza, and it’s easy to make with just a few simple ingredients. With a creamy cheese crust, flavorful pizza sauce, and your favorite toppings, it’s the perfect dish for anyone craving pizza without the carbs. It’s quick, satisfying, and sure to impress!

Ingredients

  • 2 ounces cream cheese
  • 2 cups mozzarella, shredded
  • 2 eggs, beaten
  • 1 cup almond flour
  • Pinch of salt and pepper

Instructions

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C). Grease a cast iron skillet with a little oil or cooking spray to prevent sticking.
  2. Make the Dough:
    In a microwave-safe bowl, mix the cream cheese and shredded mozzarella. Microwave for 1 minute, then stir. Heat for an additional 20 seconds until the mixture is melted and smooth.
  3. Combine the Wet and Dry Ingredients:
    In a separate bowl, add the beaten eggs to the almond flour and mix well. Then, combine this mixture with the melted cheese mixture, and work the ingredients together until a dough forms. I find using my hands works best for this step!
  4. Shape the Pizza Crust:
    Push the dough into the greased cast iron skillet, pressing it evenly to form a deep-dish-like crust. To avoid air bubbles, poke a few holes in the dough using a fork.
  5. Bake the Crust:
    Bake the crust in the preheated oven for 10-15 minutes, or until it’s golden and firm. For a crispier crust, I recommend baking it for 15 minutes.
  6. Add Toppings:
    After the crust has baked, spread a low-carb pizza sauce (like Rao’s) evenly over the crust. Add your desired pizza toppings, such as pepperoni, veggies, or cheese.
  7. Final Bake:
    Return the skillet to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly. For an extra crispy top, broil for the last few minutes of baking.
  8. Cool and Serve:
    Let the pizza cool for 10-15 minutes before slicing and serving. This helps the pizza hold together and makes it easier to cut!
