👩🍳 Preparation Steps
1️⃣ Preparing the Pink Pastry:
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Blend the cooked beets in a food processor until smooth and vibrant.
- In a mixing bowl, whisk the eggs until frothy.
- Add the beet puree, flour, olive oil, salt, and pepper. Mix well until the batter is smooth and evenly colored.
2️⃣ Baking the Base:
- Pour the beet batter onto the prepared baking sheet and spread it into an even rectangle (about 1 cm thick).
- Bake for 15 minutes, or until set but still pliable. Do not overbake.
3️⃣ Filling and Rolling:
- Let the baked base cool slightly, then gently invert it onto a sheet of plastic wrap or clean tea towel.
- Carefully peel off the parchment paper.
- Spread the goat cheese evenly over the entire surface.
- Sprinkle the chopped walnuts across the top of the cheese layer.
- Using the plastic wrap to guide you, roll the log tightly from the short edge, forming a roulade. Wrap it fully in the plastic wrap to hold its shape.
