Savory Pink Yule Log with Beetroot, Goat Cheese & Walnuts

👩‍🍳 Preparation Steps

1️⃣ Preparing the Pink Pastry:

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Blend the cooked beets in a food processor until smooth and vibrant.
  3. In a mixing bowl, whisk the eggs until frothy.
  4. Add the beet puree, flour, olive oil, salt, and pepper. Mix well until the batter is smooth and evenly colored.

2️⃣ Baking the Base:

  1. Pour the beet batter onto the prepared baking sheet and spread it into an even rectangle (about 1 cm thick).
  2. Bake for 15 minutes, or until set but still pliable. Do not overbake.

3️⃣ Filling and Rolling:

  1. Let the baked base cool slightly, then gently invert it onto a sheet of plastic wrap or clean tea towel.
  2. Carefully peel off the parchment paper.
  3. Spread the goat cheese evenly over the entire surface.
  4. Sprinkle the chopped walnuts across the top of the cheese layer.
  5. Using the plastic wrap to guide you, roll the log tightly from the short edge, forming a roulade. Wrap it fully in the plastic wrap to hold its shape.
