Savory Parmesan Panna Cotta with Tomato Jelly

Step 1: Soften the Gelatin

  1. Place the 2 gelatin sheets into a bowl of cold water and let them soak for about 10 minutes until softened.

Step 2: Make the Parmesan Base

  1. In a saucepan, combine the heavy cream and milk. Gently heat over low-medium heat until warm (do not boil).
  2. Stir in the grated Parmesan, salt, and pepper. Stir until the cheese is fully melted and the mixture is smooth.

Step 3: Add Gelatin & Set

  1. Remove the pan from heat. Squeeze the softened gelatin to remove excess water and stir it into the hot cheese mixture until fully dissolved.
  2. Pour the mixture evenly into 4 small molds or ramekins. Let cool slightly, then refrigerate for at least 2 hours until set.
