Step 1: Soften the Gelatin
- Place the 2 gelatin sheets into a bowl of cold water and let them soak for about 10 minutes until softened.
Step 2: Make the Parmesan Base
- In a saucepan, combine the heavy cream and milk. Gently heat over low-medium heat until warm (do not boil).
- Stir in the grated Parmesan, salt, and pepper. Stir until the cheese is fully melted and the mixture is smooth.
Step 3: Add Gelatin & Set
- Remove the pan from heat. Squeeze the softened gelatin to remove excess water and stir it into the hot cheese mixture until fully dissolved.
- Pour the mixture evenly into 4 small molds or ramekins. Let cool slightly, then refrigerate for at least 2 hours until set.
