👨🍳 Instructions
1. Prepare the Seafood:
- Season red snapper fillets and shrimp evenly with Cajun seasoning.
- In a large skillet, heat olive oil over medium heat.
- Sear the snapper fillets for 3–4 minutes per side, until golden and flaky.
- Add shrimp to the same pan and cook for about 2 minutes, until pink and opaque.
- Drizzle fresh lemon juice over the seafood before removing from heat.
2. Make the Cheddar Grits:
- In a saucepan, bring water and milk to a boil.
- Gradually whisk in grits. Reduce heat and simmer, stirring frequently, until thickened (about 5–7 minutes).
- Stir in cheddar cheese, butter, salt, and pepper. Mix until smooth and creamy.
3. Make the Cajun Cream Sauce:
- In a small saucepan, melt butter and sauté garlic until fragrant (about 30 seconds).
- Add chicken broth and Cajun seasoning. Simmer for 2 minutes.
- Stir in heavy cream and simmer for 3–5 minutes until slightly thickened.
