Red Snapper & Shrimp over Cheesy Grits with Cajun Cream Sauce

👨‍🍳 Instructions

1. Prepare the Seafood:

  1. Season red snapper fillets and shrimp evenly with Cajun seasoning.
  2. In a large skillet, heat olive oil over medium heat.
  3. Sear the snapper fillets for 3–4 minutes per side, until golden and flaky.
  4. Add shrimp to the same pan and cook for about 2 minutes, until pink and opaque.
  5. Drizzle fresh lemon juice over the seafood before removing from heat.

2. Make the Cheddar Grits:

  1. In a saucepan, bring water and milk to a boil.
  2. Gradually whisk in grits. Reduce heat and simmer, stirring frequently, until thickened (about 5–7 minutes).
  3. Stir in cheddar cheese, butter, salt, and pepper. Mix until smooth and creamy.

3. Make the Cajun Cream Sauce:

  1. In a small saucepan, melt butter and sauté garlic until fragrant (about 30 seconds).
  2. Add chicken broth and Cajun seasoning. Simmer for 2 minutes.
  3. Stir in heavy cream and simmer for 3–5 minutes until slightly thickened.
