Preparation
Prepare the Chocolate Cake
1. Preheat the oven to 350°F (175°C).
2. Grease two 9-inch (22–23 cm) round cake pans and line the bottoms with parchment paper.
3. In a large bowl, mix the flour, sugar, cocoa, baking powder, baking soda, and salt.
4. In a separate bowl, whisk together the milk, oil, eggs, and vanilla.
5. Add the liquids to the dry mixture and stir.
6. Finally, add the hot water (the batter will be thin, which is normal).
7. Divide the dough between two pans.
8. Bake for 28–32 minutes.
9. Let the cakes cool completely.
Prepare the Raspberry Layer
1. Place the raspberries, sugar, and lemon juice in a saucepan.
2. Bring to a boil over medium heat.
3. Add the starch mixture and cook until thickened.
4. Set aside to cool.
Make the Chocolate Ganache
1. Heat the cream (do not boil).
2. Pour over the chopped chocolate.
3. Wait 2 minutes, then stir until melted.
4. Add the butter and stir until smooth.
5. Chill for 10–15 minutes before using.
