Step 1: Prepare the Jalapeños
- Preheat oven to 375°F (190°C).
- Slice jalapeños lengthwise.
- Remove seeds and membranes for milder heat, or leave a little for extra spice.
- Place peppers cut-side up on a lined baking sheet.
- Lightly spray or brush with oil.
Step 2: Pre-Bake the Peppers
- Bake jalapeños for 8–10 minutes until slightly softened but still holding their shape.
- This step ensures tender peppers without overcooking the cheese later.
Step 3: Fill the Boats
- Press Brie strips into each jalapeño half.
- Spoon raspberry preserves over the Brie.
- Drizzle lightly with honey and lemon juice if using.
- Sprinkle with nuts for texture, if desired.
Step 4: Bake Until Melty
- Return to oven and bake for 8–10 minutes, until Brie is melted and bubbly.
- Avoid overbaking to prevent cheese from completely running out.
Step 5: Finish and Serve
- Garnish with fresh herbs.
- Let cool for 2–3 minutes before serving.
