- Line two baking sheets with parchment paper or silicone baking mats. Set them aside near your workspace so you’re ready to drop the cookies quickly once the mixture is prepared.
- In a medium saucepan, combine the unsalted butter, granulated sugar, brown sugar, and whole milk. Stir frequently over medium heat until the butter melts completely and the mixture reaches a full, rolling boil.
- Once boiling, continue to cook the mixture for exactly 90 seconds. Stir constantly during this stage to prevent burning and ensure a smooth, even consistency. This brief boil activates the setting process needed for no-bake cookies.
- Immediately remove the saucepan from the heat. Quickly stir in the pumpkin puree, vanilla extract, cinnamon, nutmeg, ginger, cloves, and a pinch of sea salt. Mix until the spiced pumpkin mixture is smooth and fully incorporated.
