Pumpkin Spice No Bake Cookies

Instructions

  1. Line two baking sheets with parchment paper or silicone baking mats. Set them aside near your workspace so you’re ready to drop the cookies quickly once the mixture is prepared.
  2. In a medium saucepan, combine the unsalted butter, granulated sugar, brown sugar, and whole milk. Stir frequently over medium heat until the butter melts completely and the mixture reaches a full, rolling boil.
  3. Once boiling, continue to cook the mixture for exactly 90 seconds. Stir constantly during this stage to prevent burning and ensure a smooth, even consistency. This brief boil activates the setting process needed for no-bake cookies.
  4. Immediately remove the saucepan from the heat. Quickly stir in the pumpkin puree, vanilla extract, cinnamon, nutmeg, ginger, cloves, and a pinch of sea salt. Mix until the spiced pumpkin mixture is smooth and fully incorporated.
