- Preheat oven: Set your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- Make the filling: In a large bowl, whisk together the pumpkin puree, both sugars, eggs, vanilla, pumpkin pie spice, cinnamon, and salt until smooth. Gradually stir in evaporated milk until fully incorporated and the mixture is creamy.
- Assemble the base: Pour the pumpkin filling into the prepared baking dish and smooth the top.
- Prepare the topping: In a separate bowl, combine flour, oats, brown sugar, cinnamon, and pecans (if using). Add the melted butter and mix until a crumbly texture forms.
- Top and bake: Sprinkle the crisp topping evenly over the pumpkin filling. Bake for 50–60 minutes, or until the topping is golden brown and the filling is set (it should no longer jiggle in the center).
- Cool and serve: Let cool slightly before serving. Delicious warm, at room temperature, or chilled!
