Instructions
1. Prepare the Batter:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
- In a large bowl, beat together the softened cream cheese and sugar until smooth and fluffy.
- Add the sour cream, beaten egg, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture and stir just until combined.
- Fold in the drained crushed pineapple. Do not overmix.
2. Bake:
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then remove and transfer to a wire rack to cool completely before glazing.
