Pineapple Quick Bread with Pineapple Glaze

Instructions

1. Prepare the Batter:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, beat together the softened cream cheese and sugar until smooth and fluffy.
  3. Add the sour cream, beaten egg, and vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture and stir just until combined.
  6. Fold in the drained crushed pineapple. Do not overmix.

2. Bake:

  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the bread cool in the pan for 10 minutes, then remove and transfer to a wire rack to cool completely before glazing.
