Pineapple Coconut Cake

Instructions

1. Make the Cake:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine crushed pineapple (with juice), eggs, oil, granulated sugar, and brown sugar. Mix until smooth.
  3. Add flour, baking soda, and salt. Stir until just combined—do not overmix.
  4. Pour the batter into the prepared dish and spread evenly.
  5. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.

2. Make the Icing:

  1. While the cake is baking, combine evaporated milk, butter, and sugar in a saucepan over medium heat. Bring to a boil.
  2. Reduce heat and simmer for 10 minutes, stirring occasionally.
  3. Stir in shredded coconut, chopped pecans, vanilla extract, and salt. Mix well and remove from heat.
