Instructions
1. Make the Cake:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large mixing bowl, combine crushed pineapple (with juice), eggs, oil, granulated sugar, and brown sugar. Mix until smooth.
- Add flour, baking soda, and salt. Stir until just combined—do not overmix.
- Pour the batter into the prepared dish and spread evenly.
- Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
2. Make the Icing:
- While the cake is baking, combine evaporated milk, butter, and sugar in a saucepan over medium heat. Bring to a boil.
- Reduce heat and simmer for 10 minutes, stirring occasionally.
- Stir in shredded coconut, chopped pecans, vanilla extract, and salt. Mix well and remove from heat.
