Peppermint Sugar Cookie Bars with Creamy Frosting

Make the Frosting

  1. In a medium bowl, beat the softened butter until completely smooth and creamy, ensuring there are no visible lumps. Gradually add the powdered sugar, mixing on low speed at first to prevent excess sugar from escaping the bowl. Continue mixing until fully incorporated.Add the heavy cream, vanilla extract, and peppermint extract. Increase the mixer speed to medium-high and beat until the frosting becomes light, fluffy, and spreadable. The frosting should hold soft peaks and glide easily across the surface of the bars.
  2. Frost the Cookie Bars:
    Once the cookie bars are completely cool, spread the frosting evenly over the entire surface using an offset spatula or the back of a spoon. Take time to create an even layer from edge to edge for consistent flavor in every bite. Immediately sprinkle the crushed peppermint candies over the frosting while it is still soft so the pieces adhere properly, adding both texture and festive appearance.
