Old Fashioned Fudge

Method:

  1. Prepare the Sugar and Water: Begin by placing the 2 cups of castor sugar and 1/4 cup of water into a medium-sized pot. Stir the mixture over low heat to dissolve the sugar. Be patient during this step, as the sugar needs to dissolve completely in the water to avoid any grittiness in the final fudge.
  2. Add the Butter and Syrup: Once the sugar has dissolved, add 4 tablespoons of butter, 2 tablespoons of golden syrup, and 1 tin of condensed milk to the pot. Stir the mixture constantly to combine the ingredients. The golden syrup will add a subtle sweetness and depth of flavor, while the condensed milk will provide the rich, creamy texture that makes this fudge so delicious.
  3. Simmer the Fudge Mixture: Keep the mixture over low heat and continue stirring to prevent it from burning. Allow it to simmer gently for approximately 25 minutes. During this time, the fudge mixture will slowly thicken and darken, eventually turning into a rich caramel color. Be sure to stir consistently, as the mixture can easily catch on the bottom of the pot and burn. The heat and time will allow the sugars to caramelize and develop that signature fudgy texture.
  4. Beat and Add Vanilla: Once the fudge has turned a deep caramel color, remove the pot from the stove. Add 1 teaspoon of vanilla extract to the mixture for a warm, aromatic flavor. Beat the mixture vigorously to help it thicken. The more you beat it, the smoother and creamier the texture will be. Continue beating until the mixture starts to firm up.
  5. Pour into a Greased Pan: Next, pour the thickened fudge mixture into a greased baking pan. Be sure to spread it evenly in the pan, smoothing the top with a spatula. This is where you’ll create the perfect shape for your fudge squares.
  6. Cool and Cut: Allow the fudge to cool completely at room temperature. Once cooled and firmed up, cut the fudge into small squares. This classic treat is now ready to enjoy!
