Prepare the Base
- In a medium saucepan, melt the butter over medium heat. Allow it to fully liquefy and foam slightly before adding the remaining ingredients, which helps the sugar dissolve more smoothly.
- Add the brown sugar, sweetened condensed milk, vanilla extract, salt, and cinnamon (if using). Stir continuously to combine. As the mixture warms, it should become glossy and uniform, with no visible sugar granules.
- Bring the mixture to a gentle simmer and cook for 2–3 minutes, stirring constantly. The gentle bubbling helps the ingredients emulsify and thicken slightly, giving the cookies their rich, caramel-like texture once chilled.
Combine the Dry Ingredients
- Remove the saucepan from the heat. While still warm, stir in the shredded coconut, chopped pecans, and oats. Mix thoroughly until everything is evenly coated. The mixture should be thick, cohesive, and easy to scoop.
