No-Bake Coconut Pecan Oatmeal Cookies

Shape the Cookies

  1. Line a baking sheet with parchment paper or a silicone baking mat. This prevents sticking and keeps the bottoms smooth once the cookies set.
  2. Drop spoonfuls of the cookie mixture onto the prepared sheet, spacing slightly to allow easy shaping. Use your hands or the back of a spoon to form each mound into a rounded, praline-like cookie. Press gently to help the oats and nuts bind together firmly.

Chill the Cookies

  1. Refrigerate the cookies for at least 1 hour, or until they are firm and fully set. Chilling allows the butter and sugar mixture to solidify, giving the cookies their chewy bite and helping them hold their shape.

Serve and Enjoy

Once set, enjoy the cookies straight from the fridge or at room temperature. Their buttery sweetness, toasted nuttiness, and chewy oats make them an irresistible no-bake treat.
