No-Bake Blueberry Chia Seed Pie

  • 1½ cups fresh or frozen blueberries
  • 2 tbsp lemon juice
  • 1–2 tbsp honey or maple syrup
  • 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)

1. Prepare the Crust:

  1. In a bowl, mix graham crumbs, melted oil/butter, and sweetener.
  2. Press the mixture into a 9-inch pie pan. Place in the fridge to set.

2. Make the Chia Filling:

  1. Whisk together coconut milk, chia seeds, maple syrup, and vanilla.
  2. Let sit 10 minutes, then stir again and pour into the chilled crust.
  3. Cover and refrigerate for at least 4 hours or overnight.
