- 1½ cups fresh or frozen blueberries
- 2 tbsp lemon juice
- 1ā2 tbsp honey or maple syrup
- 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)

1. Prepare the Crust:
- In a bowl, mix graham crumbs, melted oil/butter, and sweetener.
- Press the mixture into a 9-inch pie pan. Place in the fridge to set.
2. Make the Chia Filling:
- Whisk together coconut milk, chia seeds, maple syrup, and vanilla.
- Let sit 10 minutes, then stir again and pour into the chilled crust.
- Cover and refrigerate for at least 4 hours or overnight.
3. Make the Blueberry Topping:
