👩‍🍳 Instructions

1️⃣ Prepare the Cake Batter

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, and line the bottoms with parchment paper.
  2. In a large bowl, combine the flour, sugar, eggs, baking soda, vanilla, and crushed pineapple with its juice.
  3. Stir with a spatula or mixer on low just until all ingredients are evenly incorporated. The batter will be thick but moist from the pineapple.

2️⃣ Bake the Cake

  1. Divide the batter evenly between the two prepared pans.
  2. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden.
  3. Allow the cakes to cool in the pans for 10 minutes, then remove and let cool completely on wire racks before frosting.

3️⃣ Make the Cream Cheese Frosting

  1. In a large bowl, beat the softened cream cheese and butter together until smooth and creamy (about 2 minutes).
  2. Gradually add in the sifted powdered sugar and continue to beat until fluffy.
  3. Add vanilla extract and 2–3 tablespoons of pineapple juice to enhance the tropical flavor. Beat until smooth and spreadable.

4️⃣ Assemble the Cake

  1. Place one cooled cake layer on a serving plate or cake stand.
  2. Spread a layer of frosting evenly over the top, then add a handful of pineapple chunks if desired for extra juiciness.
  3. Place the second cake layer on top and frost the top and sides generously.
  4. Decorate with more pineapple chunks or rings if desired for a beautiful finish.
