👩🍳 Instructions
1️⃣ Prepare the Cake Batter
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, and line the bottoms with parchment paper.
- In a large bowl, combine the flour, sugar, eggs, baking soda, vanilla, and crushed pineapple with its juice.
- Stir with a spatula or mixer on low just until all ingredients are evenly incorporated. The batter will be thick but moist from the pineapple.
2️⃣ Bake the Cake
- Divide the batter evenly between the two prepared pans.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden.
- Allow the cakes to cool in the pans for 10 minutes, then remove and let cool completely on wire racks before frosting.
3️⃣ Make the Cream Cheese Frosting
- In a large bowl, beat the softened cream cheese and butter together until smooth and creamy (about 2 minutes).
- Gradually add in the sifted powdered sugar and continue to beat until fluffy.
- Add vanilla extract and 2–3 tablespoons of pineapple juice to enhance the tropical flavor. Beat until smooth and spreadable.
4️⃣ Assemble the Cake
- Place one cooled cake layer on a serving plate or cake stand.
- Spread a layer of frosting evenly over the top, then add a handful of pineapple chunks if desired for extra juiciness.
- Place the second cake layer on top and frost the top and sides generously.
- Decorate with more pineapple chunks or rings if desired for a beautiful finish.
