  1. In a bowl, combine the milk and cornmeal. Stir well and let the mixture rest for 20 minutes. This helps soften the cornmeal and creates a tender cake texture.

2ļøāƒ£ Blend the Batter:

  1. After soaking, transfer the cornmeal mixture to a blender.
  2. Add the eggs, oil, and sugar. Blend for about 5 minutes until the batter is smooth and creamy.

3ļøāƒ£ Add Final Ingredients:

  1. Add the grated coconut or cheese and the baking powder to the blender.
  2. Pulse just a few times to combine — avoid overmixing to preserve airiness.

4ļøāƒ£ Prepare the Pan & Bake:

  1. Grease and flour a 22cm (9-inch) round baking pan or line with parchment paper.
  2. Pour the batter into the prepared pan and tap gently to release any air bubbles.
  3. Bake in a preheated oven at 180°C (350°F) for 35–45 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
