Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a rimmed sheet pan (roughly 9×13 inches) with cooking spray or line with parchment paper, then brush with the melted butter to prevent sticking and add flavor.
- In a large mixing bowl, combine the cottage cheese, eggs, and vanilla extract. Whisk until the eggs are fully incorporated and the mixture appears smooth and creamy, with some small curds remaining. This creates a moist, protein-rich base for your pancakes.
- In a separate medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. This dry mixture ensures even leavening and seasoning throughout the batter.
- Gradually fold the dry ingredients into the wet mixture using a spatula. Mix just until no streaks of flour remain, being careful not to overmix, which could lead to dense pancakes. The batter will be thick but scoopable.
- Gently fold in the mixed berries, taking care not to crush them, especially if using fresh berries. If using frozen berries, add them directly from the freezer to prevent excess color bleeding into the batter.
- Pour the batter into the prepared sheet pan and spread it evenly using an offset spatula or the back of a spoon. Aim for a level surface to ensure even baking.
