1. Prepare the Crust:
- In a medium bowl, mix graham cracker crumbs and sugar.
- Stir in melted butter until the mixture resembles wet sand.
- Press the crust mixture into the bottom of a 9-inch springform pan to form an even layer. Refrigerate while preparing the filling.
2. Make the Cheesecake Filling:
- In a large bowl, beat softened cream cheese and powdered sugar until smooth and fluffy.
- Add vanilla extract and marshmallow fluff; beat until fully incorporated.
- Gently fold in whipped heavy cream with a spatula to keep the mixture light and airy.
- Pour over the prepared crust and smooth the top. Chill in the refrigerator for at least 4 hours or until fully set.
