For the 7UP Lemon Glaze:
- Prepare the Glaze:
While the cake is cooling, prepare the glaze by whisking together the powdered sugar, 7UP, fresh lemon juice, and lemon extract (if using). The glaze should be smooth and pourable, but not too runny. If it’s too thick, add a little more 7UP; if it’s too thin, add a bit more powdered sugar until the desired consistency is reached.
- Glaze the Cake:
Once the cake has cooled for about 10-15 minutes, remove it from the pan and place it on a wire rack. Drizzle the glaze generously over the top of the cake, allowing it to drip down the sides. For an extra touch, you can drizzle some additional glaze on each slice when serving.
