Lemon Pepper Salmon with Garlic Asparagus & Zucchini Medley

👩‍🍳 Directions

1️⃣ Cook the Salmon

  1. Rub the salmon fillet with olive oil, lemon pepper seasoning, paprika, and salt.
  2. Pan-Sear Method: Heat a nonstick skillet over medium-high heat. Cook salmon for 4–5 minutes per side until golden and cooked through.
  3. Baking Option: Preheat oven to 400°F (205°C) and bake salmon for 12–14 minutes, or until it flakes easily with a fork.
  4. Top with a fresh lemon slice for extra brightness.

2️⃣ Sauté the Asparagus

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add asparagus, garlic powder (or minced garlic), salt, and pepper.
  3. Sauté for 5–7 minutes, turning occasionally, until asparagus is bright green and lightly charred.

3️⃣ Make the Zucchini Medley

  1. In another skillet, heat butter or olive oil over medium heat.
  2. Add diced onion and cook for 1 minute until softened.
  3. Add sliced zucchini and yellow squash.
  4. Season with salt, pepper, and optional Italian seasoning.
  5. Cook for 6–8 minutes, stirring occasionally, until vegetables are tender and lightly golden.
