👩🍳 Instructions
1️⃣ Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease a loaf pan with nonstick spray or line it with parchment paper.
2️⃣ Make the Bread Batter:
- In a large mixing bowl, combine mashed bananas, granulated sugar, brown sugar, egg, and vegetable oil. Mix well until fully combined.
- Add flour, baking powder, baking soda, and salt. Mix gently until just incorporated, being careful not to overwork the batter.
- Fold in the shredded coconut, diced pineapple, and chopped pecans, ensuring they’re evenly distributed throughout the batter.
3️⃣ Bake the Bread:
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
4️⃣ Make the Frosting:
- While the bread is cooling, beat the softened cream cheese and butter together until smooth and creamy.
- Add powdered sugar, vanilla extract, and ground cinnamon. Beat until light and fluffy, about 2-3 minutes.
- Once the bread has cooled completely, spread the frosting generously over the top.
