Hummingbird Bread with Heavenly Cinnamon Cream Cheese Frosting

👩‍🍳 Instructions

1️⃣ Preheat the Oven:

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with nonstick spray or line it with parchment paper.

2️⃣ Make the Bread Batter:

  1. In a large mixing bowl, combine mashed bananas, granulated sugar, brown sugar, egg, and vegetable oil. Mix well until fully combined.
  2. Add flour, baking powder, baking soda, and salt. Mix gently until just incorporated, being careful not to overwork the batter.
  3. Fold in the shredded coconut, diced pineapple, and chopped pecans, ensuring they’re evenly distributed throughout the batter.

3️⃣ Bake the Bread:

  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  3. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

4️⃣ Make the Frosting:

  1. While the bread is cooling, beat the softened cream cheese and butter together until smooth and creamy.
  2. Add powdered sugar, vanilla extract, and ground cinnamon. Beat until light and fluffy, about 2-3 minutes.
  3. Once the bread has cooled completely, spread the frosting generously over the top.
