Instructions
1. Marinate the Lamb:
- In a mixing bowl, whisk together olive oil, soy sauce, honey, Dijon mustard, minced garlic, paprika, black pepper, salt, oregano, and crushed red pepper (if using).
- Coat the lamb chops thoroughly in the marinade. Cover and refrigerate for at least 30 minutes or overnight for deeper flavor.
2. Cook the Lamb Chops:
- Heat a skillet or grill pan over medium-high heat. Add butter and allow it to melt and bubble.
- Sear the marinated lamb chops for 3–4 minutes per side until a golden crust forms.
- Reduce heat, cover, and cook for an additional 3–5 minutes for medium-rare, or longer to your desired doneness.
3. Make the Glaze:
- Remove lamb chops from the pan and let rest.
- In the same skillet, add balsamic vinegar and a small drizzle of honey. Stir and let the glaze simmer for about 2 minutes, until slightly thickened.
- Drizzle the glaze over the lamb chops just before serving.
