Homemade Egg Noodles – Just 5 Ingredients for Old-Fashioned Comfort

1. Make the Dough

  1. In a medium bowl, beat the egg and egg yolks until light and fluffy (about 1 minute).
  2. Add cold water and salt, mixing until combined.
  3. Gradually stir in the flour until a shaggy dough forms.
  4. Transfer to a floured surface and knead for 8–10 minutes until the dough becomes smooth and elastic. Add flour as needed to prevent sticking.

2. Roll & Cut

  1. Let dough rest for 10 minutes, then roll out to about 1/8-inch thickness on a floured surface.
  2. Cut into strips using a sharp knife or pizza cutter. Make them as thin or wide as you like.
  3. Shake noodles gently to separate and dust lightly with flour to prevent sticking.

3. Store or Cook

  1. To store: Refrigerate for 2–3 days or freeze in an airtight container for up to 1–2 months.
  2. To cook: Drop into boiling salted water and cook for 7–9 minutes until tender. Drain and serve as desired.
