👩🍳 Instructions
1. Make the Dough
- In a medium bowl, beat the egg and egg yolks until light and fluffy (about 1 minute).
- Add cold water and salt, mixing until combined.
- Gradually stir in the flour until a shaggy dough forms.
- Transfer to a floured surface and knead for 8–10 minutes until the dough becomes smooth and elastic. Add flour as needed to prevent sticking.
2. Roll & Cut
- Let dough rest for 10 minutes, then roll out to about 1/8-inch thickness on a floured surface.
- Cut into strips using a sharp knife or pizza cutter. Make them as thin or wide as you like.
- Shake noodles gently to separate and dust lightly with flour to prevent sticking.
3. Store or Cook
- To store: Refrigerate for 2–3 days or freeze in an airtight container for up to 1–2 months.
- To cook: Drop into boiling salted water and cook for 7–9 minutes until tender. Drain and serve as desired.
