👩🍳 Instructions
- Preheat oven: Set oven to 350°F (175°C). Grease a 9×9-inch baking dish with olive oil or nonstick spray.
- Beat eggs: In a large bowl, whisk the eggs thoroughly until well mixed and slightly frothy.
- Add dairy: Stir in cottage cheese until the mixture is smooth.
- Add veggies & season: Mix in the chopped spinach, bell pepper, onion, and all seasonings (garlic powder, onion powder, salt, pepper).
- Add cheese: Fold in the shredded cheddar, reserving a little to sprinkle on top.
- Bake: Pour mixture into the greased baking dish. Top with the reserved cheese. Bake for 40–45 minutes or until center is set and top is lightly golden.
- Cool & serve: Let the egg bake rest for 5 minutes before slicing. Serve warm or store for later.
