1. Make the dough
- In a large bowl, mix warm milk + yeast + sugar. Let sit 5 minutes until foamy.
- Add egg, melted butter, and salt; mix well.
- Add flour gradually until a soft dough forms.
- Knead 5–7 minutes (or 3 minutes on medium in a mixer) until smooth.
- Cover and let rise 1 hour, or until doubled.
2. Prepare the filling
Mix soft butter, brown sugar, cinnamon, and optional cream into a spreadable paste.
3. Roll out the dough
- Punch down dough and turn onto a floured surface.
- Roll into a large rectangle (about 12×18 inches / 30×45 cm).
- Spread the cinnamon filling evenly over the dough.
4. Fold and cut
- Fold the dough in half lengthwise (like closing a book).
- Cut into 1-inch wide strips.
- Take each strip, twist several times, and place on a lined baking sheet.
