Grandma’s Great Depression Potato Soup

1️⃣ Boil the Potatoes & Onions

  1. Place the chopped potatoes and sliced onions into a large 12-quart stew pot.
  2. Cover with water until the level is about 2 inches above the ingredients.
  3. Bring to a boil over high heat, then reduce heat slightly and boil until potatoes are fork-tender.

2️⃣ Add the Creamy Base

  • Once the potatoes are tender, add 1 stick of butter and let it melt.
  • Pour in 1 cup of heavy whipping cream, stirring to combine.
  • Season with salt and pepper to taste, keeping in mind any salty toppings you may add later.

3️⃣ Thicken Naturally

  • If a thicker soup is desired, remove some potatoes, mash them, and stir them back into the pot.
  • Repeat the process until you reach your desired consistency—no need for flour or cornstarch!

4️⃣ Serve With Optional Toppings

  • Offer toppings on the side so everyone can customize:
    • Chopped green onions
    • Crumbled bacon (go easy on added salt)
