Grandma’s Fluffy Cinnamon Sugar Donut Muffins

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with paper liners.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the flour, sugar, cinnamon, nutmeg, baking powder, and salt until well combined.
  3. Mix wet ingredients: In a separate bowl, whisk together the egg, milk, vegetable oil, and vanilla extract until smooth.
  4. Combine: Pour the wet ingredients into the dry ingredients and stir just until combined. Be careful not to overmix—the batter should be slightly lumpy for the fluffiest texture.
  5. Fill the muffin pan: Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.
  6. Bake: Bake for 15–18 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
