- Preheat oven: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with paper liners.
- Mix dry ingredients: In a large mixing bowl, whisk together the flour, sugar, cinnamon, nutmeg, baking powder, and salt until well combined.
- Mix wet ingredients: In a separate bowl, whisk together the egg, milk, vegetable oil, and vanilla extract until smooth.
- Combine: Pour the wet ingredients into the dry ingredients and stir just until combined. Be careful not to overmix—the batter should be slightly lumpy for the fluffiest texture.
- Fill the muffin pan: Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.
- Bake: Bake for 15–18 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
