1️⃣ Preheat:

Preheat your oven to 375°F (190°C). Line a baking tray with parchment paper to prevent sticking.

2️⃣ Make the Dough:

In a medium bowl, mix the almond flour, baking powder, and salt.

Add the cottage cheese and egg. Stir until a thick, cohesive dough forms. If using full-fat cottage cheese, blending it before adding will create an extra smooth, fluffy dough.

3️⃣ Shape the Bagels:

Divide the dough into 4 equal portions. Wet your hands slightly to prevent sticking, then roll each portion into a ball and shape into bagels by poking a hole in the center or forming a ring.

Place on the prepared baking tray and sprinkle with optional toppings like sesame seeds or everything bagel seasoning.
