Step 1: Prepare the Cucumber
- For easier slicing, place the cucumber in the freezer for 10–15 minutes.
- Using a mandoline or sharp vegetable peeler, cut the cucumber lengthwise into very thin, even strips.
- Place the slices on paper towels to absorb excess moisture. This will help them stay firm and roll easily.
Step 2: Make the Crab Filling
- In a medium bowl, combine crabmeat, chopped chives, mayonnaise or crème fraîche, lemon juice, salt, and pepper.
- Gently mix until evenly combined. Adjust seasoning if needed.
Step 3: Assemble the Cannelloni
- Lay one cucumber strip flat on a clean surface. Place a heaping teaspoon of filling at one end.
- Carefully roll the strip around the filling to form a tight cylinder.
- Repeat with remaining cucumber strips and filling. You should get 8–10 rolls depending on cucumber size and slice width.
