Cucumber Cannelloni with Crab – A Fresh & Elegant Appetizer

👩‍🍳 Instructions

Step 1: Prepare the Cucumber

  1. For easier slicing, place the cucumber in the freezer for 10–15 minutes.
  2. Using a mandoline or sharp vegetable peeler, cut the cucumber lengthwise into very thin, even strips.
  3. Place the slices on paper towels to absorb excess moisture. This will help them stay firm and roll easily.

Step 2: Make the Crab Filling

  1. In a medium bowl, combine crabmeat, chopped chives, mayonnaise or crème fraîche, lemon juice, salt, and pepper.
  2. Gently mix until evenly combined. Adjust seasoning if needed.

Step 3: Assemble the Cannelloni

  1. Lay one cucumber strip flat on a clean surface. Place a heaping teaspoon of filling at one end.
  2. Carefully roll the strip around the filling to form a tight cylinder.
  3. Repeat with remaining cucumber strips and filling. You should get 8–10 rolls depending on cucumber size and slice width.
