Step 1: Preheat Oven
Preheat your oven to 375°F (190°C). Line a baking tray with parchment paper for easy cleanup.
Step 2: Prepare the Filling
In a small bowl, mix the crumbled feta with a splash of olive oil or melted butter to soften it slightly. Season with a pinch of salt if your feta isn’t very salty.
Step 3: Assemble the Rolls
- Lay one sheet of phyllo on a clean surface. Brush lightly with melted butter or olive oil.
- Place another sheet directly on top and brush again.
- Near one edge, place a thin line of the feta mixture.
- Roll the phyllo into a tight log, sealing the edge with a bit of water.
- Repeat to create 3 total logs, then slice each in half to make 6 rolls.
Step 4: Bake
- Place rolls seam-side down on the prepared tray.
- Brush tops with remaining butter or oil and sprinkle with sesame seeds.
- Bake for 20–25 minutes, or until golden and crisp.
