1️⃣ Make the Batter
- In a mixing bowl, whisk together the flour, baking powder, salt, garlic powder, and paprika.
- Add the egg and milk, and whisk until the batter is smooth and lump-free.
- Fold in the chopped sweet onions, ensuring they are evenly coated. Add parsley if using.
2️⃣ Fry the Fritters
- Heat about ½ inch of oil in a skillet over medium-high heat until shimmering but not smoking.
- Drop spoonfuls of the batter into the hot oil (about 2 tablespoons each). Flatten slightly with the back of a spoon if needed for even cooking.
- Fry for 2–3 minutes per side until golden brown and crispy.
- Remove with a slotted spoon and drain on a plate lined with paper towels.
3️⃣ Serve
- Serve the fritters warm with a dipping sauce like ranch, sour cream, chipotle mayo, or even a zesty aioli.
