- Using a sharp knife, carefully slice a horizontal pocket into each salmon fillet, being careful not to cut all the way through.
- Generously fill each pocket with the prepared spinach mixture.
3️⃣ Cook the Salmon:
- Season the outside of the fillets with paprika, lemon pepper, salt, and black pepper.
- In a large skillet, heat 1 tablespoon olive oil over medium heat. Sear the salmon for 3–4 minutes per side until golden and cooked through.
- Transfer to a plate and keep warm.
4️⃣ Make the Garlic Shrimp:
- In a separate pan, melt butter over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.
- Add the shrimp, paprika, salt, and pepper. Cook for 3–4 minutes, flipping once, until shrimp are pink and tender.
- Sprinkle with chopped parsley. Remove from heat.
5️⃣ Roast the Asparagus:
- Preheat oven to 200°C (400°F).
- Place asparagus on a baking sheet, drizzle with olive oil, and season with salt and pepper.
- Roast for 10–12 minutes until tender and lightly golden.
