Creamy Spinach-Stuffed Salmon with Garlic Shrimp & Asparagus

  1. Using a sharp knife, carefully slice a horizontal pocket into each salmon fillet, being careful not to cut all the way through.
  2. Generously fill each pocket with the prepared spinach mixture.

3️⃣ Cook the Salmon:

  1. Season the outside of the fillets with paprika, lemon pepper, salt, and black pepper.
  2. In a large skillet, heat 1 tablespoon olive oil over medium heat. Sear the salmon for 3–4 minutes per side until golden and cooked through.
  3. Transfer to a plate and keep warm.

4️⃣ Make the Garlic Shrimp:

  1. In a separate pan, melt butter over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.
  2. Add the shrimp, paprika, salt, and pepper. Cook for 3–4 minutes, flipping once, until shrimp are pink and tender.
  3. Sprinkle with chopped parsley. Remove from heat.

5️⃣ Roast the Asparagus:

  1. Preheat oven to 200°C (400°F).
  2. Place asparagus on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Roast for 10–12 minutes until tender and lightly golden.
