👩🍳 Instructions
1️⃣ Prepare the Filling:
- In a mixing bowl, combine chopped spinach, cream cheese, Parmesan, minced garlic, salt, pepper, and optional nutmeg.
- Mix until smooth and creamy. Set aside. 🥬🧄🧀
2️⃣ Prepare the Chicken:
- Pat chicken breasts dry. Using a sharp knife, carefully slice a deep pocket into the thickest side of each breast without cutting all the way through.
- Spoon an equal amount of filling into each pocket. Secure the opening with toothpicks if needed. 🐔
- Season both sides of the stuffed chicken with salt, pepper, and paprika. 🌿
3️⃣ Sear the Chicken:
- Preheat oven to 180°C (350°F).
- Heat olive oil in a large oven-safe skillet over medium heat.
- Sear each chicken breast for 4–5 minutes per side until golden brown.
4️⃣ Bake to Finish:
- Transfer the skillet to the preheated oven.
- Bake for 15–20 minutes, or until the internal temperature reaches 75°C (165°F) and juices run clear. 🍗
