Step 1: Cook the Linguine
- Bring a large pot of salted water to a boil.
- Cook the linguine until al dente according to package instructions.
- Before draining, reserve ½ cup of the pasta water. Drain and set aside.
Step 2: Cook the Cajun Chicken
- Pat chicken strips dry. Season with Cajun seasoning, smoked paprika, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken for 3–4 minutes per side until golden brown and fully cooked.
- Transfer cooked chicken to a plate and set aside.
Step 3: Make the Creamy Garlic Sauce
- In the same skillet, melt butter over medium heat.
- Add garlic and sauté for 30 seconds until fragrant.
- Pour in the heavy cream and bring to a gentle simmer.
- Whisk in cream cheese until melted and smooth.
- Stir in mozzarella and Parmesan until the sauce becomes creamy and velvety.
- Add red pepper flakes for heat, if using.
