Creamy Eggnog Cookie Bars Recipe

  • Coarse sugar, for sprinkling (optional)
  • Ground nutmeg, for dusting (optional)

Instructions

1️⃣ Preheat Oven

  • Preheat your oven to 350°F (175°C).
  • Grease and line a 9×13-inch (23×33 cm) baking pan with parchment paper.

2️⃣ Make the Cookie Base

  1. In a medium bowl, whisk together flour, baking powder, baking soda, nutmeg, cinnamon, and salt. Set aside.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).
  3. Beat in the egg, eggnog, and vanilla extract until smooth and well combined.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined. Do not overmix.
  5. Set the batter aside while you prepare the cream cheese swirl.

3️⃣ Prepare Cream Cheese Swirl

  1. In a medium bowl, beat the softened cream cheese with the sugar until smooth and lump-free.
  2. Add the egg yolk and vanilla extract, and mix until creamy and well blended.

4️⃣ Assemble and Bake
