Preheat the Oven: Preheat your oven to 325°F. Lightly grease a 9×13-inch casserole dish to prevent sticking and make serving easier.
Brown the Beef: In a large skillet over medium heat, brown the ground beef, breaking it up as it cooks. Once fully cooked, drain off any excess fat to keep the casserole from becoming greasy.
Build the Filling: Stir the Ranch Style beans, Ro-tel tomatoes, chopped onion, taco seasoning, cream of chicken soup, and water into the browned beef. Reduce the heat to medium-low and simmer for several minutes, stirring occasionally, until everything is well combined and heated through. The mixture should be thick, saucy, and evenly seasoned.
Assembling and Baking
Layer the Casserole: Spread a layer of crushed tortilla chips evenly over the bottom of the prepared casserole dish. Spoon a generous layer of the meat and bean mixture over the chips, spreading it evenly. Sprinkle with half of the shredded cheddar cheese.
Repeat the Layers: Add another layer of crushed tortilla chips, followed by the remaining meat mixture, and finish with the remaining cheddar cheese on top.
Bake: Cover the casserole loosely with foil and bake for 20–30 minutes, or until the casserole is hot, bubbly around the edges, and the cheese is fully melted.
Rest Before Serving: Remove the casserole from the oven and let it sit for 5–10 minutes. This resting time allows the layers to set slightly, making it easier to serve.
