Classic Comfort Food

  1. In a medium saucepan, melt the butter over medium heat.
  2. Add the flour and whisk constantly for about 2 minutes, until it forms a smooth paste and begins to turn golden (this is your roux).

3️⃣ Create the Cream Sauce

  1. Slowly add the warm milk to the roux, whisking continuously to prevent lumps.
  2. Cook and stir for about 5 minutes, or until the sauce thickens to a creamy consistency.

4️⃣ Add the Beef and Season

  1. Stir in the chopped dried beef and a pinch of cayenne pepper (optional for a slight kick).
  2. Simmer for another 1–2 minutes to warm through and meld flavors.

5️⃣ Serve

  • Spoon the creamed chipped beef generously over toasted bread slices.
  • Serve hot, optionally with a side of sautéed greens or soft-cooked eggs for a fuller meal.
