👩🍳 Instructions
1. Prepare the Dough
- Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
- In a large bowl, beat the eggs and sugar until the mixture is pale and slightly frothy (about 2–3 minutes).
- Stir in the almond extract until fully incorporated.
- Add the flour, baking powder, and salt. Mix until a thick but pliable dough forms.
- Gently fold in the almonds and mix just until evenly distributed throughout the dough.
2. First Bake
- Shape the dough into a long, flat log about 25 cm (10 inches) long and 5–6 cm wide. Place on the prepared baking sheet.
- Bake for 15 minutes, or until the log is lightly golden and set. Let it cool for 5 minutes (it will be easier to slice).
3. Slice & Second Bake
- Using a serrated knife, slice the log diagonally into 1.5 cm (½ inch) thick slices.
- Arrange slices cut-side down on the baking sheet. Bake again for 10–12 minutes, flipping halfway through, until golden and crisp.
4. Finish & Serve
