Classic Almond Biscotti

👩‍🍳 Instructions

1. Prepare the Dough

  1. Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
  2. In a large bowl, beat the eggs and sugar until the mixture is pale and slightly frothy (about 2–3 minutes).
  3. Stir in the almond extract until fully incorporated.
  4. Add the flour, baking powder, and salt. Mix until a thick but pliable dough forms.
  5. Gently fold in the almonds and mix just until evenly distributed throughout the dough.

2. First Bake

  1. Shape the dough into a long, flat log about 25 cm (10 inches) long and 5–6 cm wide. Place on the prepared baking sheet.
  2. Bake for 15 minutes, or until the log is lightly golden and set. Let it cool for 5 minutes (it will be easier to slice).

3. Slice & Second Bake

  1. Using a serrated knife, slice the log diagonally into 1.5 cm (½ inch) thick slices.
  2. Arrange slices cut-side down on the baking sheet. Bake again for 10–12 minutes, flipping halfway through, until golden and crisp.

4. Finish & Serve
